Kimchi and Buchaechum, a taste of Korean culture at SM Clark
Tasty fermented vegetables soaked in colourful spices and herbs. Flashing fans in colourful costumes and beautiful faces. A glimpse of Korea’s vibrant culture in a very challenging environ at the heart of Central Luzon.
Too much for the thought? No, not exactly. If you haven’t been at the SM City Clark lately, this is what you missed. The Korean Festival was held at The Event Centre of SM Clark last Aug 1, 2009.
The festivity was initiated by the presentation of a dance number by the TRS Dance group. Korean cultural performances like the Buchaechum (Korean Fan Dance), Taekwondo (Korean martial art), Ham Sasio (Korean Wedding Dance) were presented while video clips were shown about the recent events of the IYF (International Youth Fellowship). Their theme “Challenge, Change and Cohesion” aims to give the audience a view of their life and day-to-day challenges. But the highlight of the festival is the preparation for the world-famous Korean kimchi (any of Korean’s pickled dish).
Korean Classic Cabbage Kimchi is a side dish of fermented vegetables continues to be an essential part of any Korean meal. Early kimchi dishes were relatively mild, spiced with fermented anchovies, ginger, garlic, and green onions. Koreans still use these ingredients today, but the spice most closely associated with modern kimchi is red pepper powder.
Born from the need to preserve vegetables throughout the country’s long and bitter winter months, this fermented pickled cabbage is a mandatory presence on every Korean table. Its high vitamin content and tart, slightly sour and spicy flavor is now winning many converts abroad.
Korea boasts more than two hundred types of Kimchi, all rich in vitamins, minerals, and proteins created by the lactic acid fermentation of cabbage, radish, and other vegetables and seafood.
